Rooke’s extensive background includes senior roles at Ghirardelli Chocolate Company, where she oversaw a $30 million restaurant and retail division, spearheaded new location openings, and optimized operations across multiple markets. Her leadership extended to managing high-profile concepts like Himmarshee Bar & Grille and Virtue Feed & Grain, where she drove profitability, streamlined processes, and elevated guest experiences.

 

Since joining ARP in 2015, Rooke has been instrumental in shaping the company’s operational success. She has led transformative initiatives, including the deployment of advanced POS systems across ten restaurants, the creation of standardized operating procedures, and the comprehensive management of new restaurant openings. Her strategic approach integrates budgeting, training, and program development to ensure operational excellence and sustainable growth across ARP’s portfolio.
